The recipe of the babà

The babà is a very soft yeast cake, wet with rum and mushroom-shaped. It is a typical product of traditional Neapolitan pastry.

Originally it was a natural leavening cake from Poland and other Slavic countries, then it was perfected by French cooks before arriving in Naples. It is said that the recipe for rum babà in the typical modern mushroom form dates back to 1835 and is attributed to the famous pastry chef Nicolas Stohrer, who would have invented it on the occasion of the wedding of Maria Leszczyńska with the king of France Louis XV.

Another story tells that the king, known for his ugly character, had thrown the cake against a cupboard crushing a bottle of rum, which ended up soaking the cake and that his father-in-law tasted it and thought it was excellent.

The babà has fully entered the tradition of Neapolitan pastry both in the form of donut served with whipped cream, both smaller with custard and black cherry, or oblong mushroom-shaped of various sizes. It can be filled with cream and fruit salad, chantilly cream and strawberries, mascarpone and limoncello cream, hazelnut cream, citrus cream, with pistachio and fresh raspberries. Even were also made savory versions very tasty with meats and cheeses such as provolone, scamorza, Gruviera or pecorino.

Recipe of the babà

Ingredients for the babàs

  • 125 g flour
  • 50 g butter
  • 2 whole eggs (large)
  • 1 yolk
  • 15 g milk
  • 15 g sugar
  • 15 g brewer’s yeast
  • a pinch of salt

For the syrup:

  • 500 g water
  • 250 g sugar
  • 250 g rum
  • 1 lemon
  1. To start preparing babas with rum, briefly mix flour and yeast in the stand mixer with the hook, or by hand. Add milk, eggs and yolk, previously mixed and work for a few minutes until smooth. To avoid lumps, add the egg and milk mixture while the mixer is running or, if you are working by hand, keep mixing. Add sugar and mix. Finally add salt and butter, softened at room temperature. The dough should be soft, almost liquid.
  2. Then put the dough in a sac à poche. Pour it, then, into the molds, and fill up to about 1 cm from the edge. Leave to rise for about 30 minutes at 30 ºC in the oven. Turn off the light.
  3. Bake at 180 ºC in a ventilated oven preheated for about 13 minutes. The babas will be ready when they can be easily removed from the mould. You can cut the bottom of a babà and check the alveolature of the dough. Unmold and let cool very well.

The syrup

  1. To prepare the cake syrup: in a saucepan heat water, sugar and lemon peel. Boil it and then filter. Add rum. Put the syrup in a bowl and, when it is still warm, completely immerse the babas for a few moments. Drain on a cake rack.
  2. Put them in the fridge for 1 hour before serving to enjoy them. Rum babas, before being wet, can be stored in the refrigerator for about a week or in the freezer, until the evening before use, tightly closed in a food bag.

A day in Crapolla

Crapolla è una località marina del paese di Torca, frazione di Massa Lubrense. Affaccia sul golfo di Salerno a poca distanza dalla rinomata Positano. Il fiordo si insinua nel Monte di Torca, dove sorgono una torre antisaracena e i resti dell’abbazia di San Pietro.

Il Fiordo di Crapolla a Massa Lubrense è certamente tra le più suggestive insenature della Penisola Sorrentina, un luogo che custodisce un ricco patrimonio storico e naturalistico.

Cosa fare in un giorno a Crapolla

Il fiordo di Crapolla è raggiungibile esclusivamente a piedi partendo dalla piazzetta di Torca. Gli autobus SITA che raggiungono questa frazione partono da Sorrento, alcuni passano da Massa Centro prima di raggiungere Sant’Agata sui due golfi, quindi Torca. Per chi arriva in auto, c’è possibilità di parcheggio nelle strisce blu, nella piazzetta accanto alla Chiesa di San Tommaso Apostolo.

Il sentiero può essere intrapreso anche da Sant’Agata sui due Golfi, che dista solo un chilometro da Torca. Il percorso è di difficoltà elevata, ma ben tracciato. Prima di intraprenderlo, assicuriamoci di avere con noi abbondante acqua, cibo, un cappellino e scarpe da trekking.

Dopo un primo tratto tra i vicoletti del centro abitato, il sentiero si innesta su una vecchia mulattiera circondata dalla flora mediterranea.

Sentiero di Crapolla

Arrivati sul belvedere noto come “La guardia”, vi è una diramazione (tracciata con la fascia bianco-rossa) che prevede un percorso di ben 700 gradini che conducono al fiordo.

Il panorama

Sul versante di Positano si avvista l’arcipelago de Li Galli, che si lega al mito di Ulisse e delle sirene.

C’è poi Vetara, isolotto disabitato. Dista poche centinaia di metri lo Scoglio Isca, in passato abitato da Eduardo de Filippo, scelto come location del film È stata la mano di Dio di Paolo Sorrentino, il quale mostra le meraviglie della Penisola Sorrentina e della Costiera Amalfitana in scene solari, luminose e a tratti comiche.

Sul versante opposto si ammira il profilo di Punta Penna che delimita l’incantevole baia di Marina del Cantone.

La cappella e la spiaggia

Per fare una pausa dall’impegnativa passeggiata, lungo il sentiero che porta al fiordo si può visitare la Cappella di San Pietro, che si racconta sia stata edificata con le stesse pietre con cui era stata costruita la precedente Abbazia di San Pietro. Secondo la leggenda, quest’ultima sorgeva a sua volta sulle rovine di un antico tempio dedicato al dio Apollo e questo spiegherebbe il toponimo Crapolla.

Oltrepassata la cappella di San Pietro si giunge, finalmente, alla spiaggia. La spiaggia di Crapolla, in ciottoli, è anch’essa parte della Riserva Marina Protetta di Punta Campanella e solo in alcune ore del giorno è esposta al sole, mentre per gran parte della giornata resta in ombra.

La strata di ritorno è la stessa dell’andata, per cui consigliamo di evitare di percorrerla nelle ora più calde, soprattutto nei mesi estivi.

Parliamo di escursioni giornaliere che si svolgono su sentieri i cui itinerari non sono troppo complessi e richiedono un’attrezzatura minima.

Oltre 100 km di sentieri segnalati, paesaggi dai colori incredibili, calette nascoste e antiche viuzze tra i borghi sono alcuni dei motivi per cui Massa Lubrense è il luogo perfetto per passeggiare. La rete sentieristica gode di imperdibili e indimenticabili panorami sui due golfi di Napoli e Salerno.

Vediamo, quindi, quali sono i più bei sentieri che vanno verso il mare a Massa Lubrense.

Il fiordo di Crapolla

Il fiordo di Crapolla, una stretta e profonda spaccatura nella roccia che si insinua tra l’alta scogliera, da tenere in considerazione per svolgere hiking

È da non perdere il fiordo di Crapolla, un fiordo naturale che si trova a Torca, frazione di Massa Lubrense.

Si tratta di un’insenatura situata tra Recommone e Punta Taschiera che termina con una piccola, ma suggestiva, spiaggia in ciottoli, circondata da resti archeologici romani.

Fa parte dell’Area Marina Protetta di Punta Campanella e il mare è cristallino e incontaminato. Nei pressi della riva si può rimanere ammaliati da una flora e una fauna marina pregevolissima.

Per fare hiking in questa splendida zona di mare si consiglia di portare con sé cibo e abbondante acqua e di prediligere le ore meno calde, in quanto lungo il sentiero non ci sono molte zone d’ombra. In questo modo sarà possibile godere senza problemi dell’esperienza e del panorama mozzafiato.

Recommone

Vi è poi l’insenatura di Recommone che si trova fra la Marina del Cantone e il Fiordo di Crapolla ed è caratterizzata da scogli, sassolini bianchi e ghiaia. È un luogo perfetto per godersi il sole e il mare in una cornice rocciosa, per cui si suggerisce di portare con sé ciabatte adatte a camminare sui ciottoli.

Si tratta di un posto incantevole che può essere raggiunto in barca o a piedi da Marina del Cantone. Il percorso attraversa il promontorio di Sant’Antonio, con incantevoli viste sul mare, poi il sentiero attraversa una boscaglia fino a fiancheggiare un muro di contenimento prima che si apra alla vista la costa di Recommone.

Oggi Ieranto è riconosciuta Sito di Interesse Comunitario, incluso nell’Area Marina Protetta di Punta Campanella ed è un luogo ideale per tutti coloro che apprezzano il contatto con la natura più incontaminata grazie all’abbondantissima biodiversità.

On 8 and 9 July in Massa Lubrense, on the occasion of the Limoni in Festa 2023, it will be held an interesting tasting itinerary with a lemon menu to taste in the streets of Massa Centro.

To participate in the tasting itinerary you can buy tickets in a stand located opposite the headquarters of the Pro Loco in Massa Lubrense. The ticket costs 15 euros and can be used on both days, Saturday 8 July and Sunday 9 July. Tickets sales will start at 18:30 and will end at 22:00 and they can be used from 19:00 to 22:30.

The tickets will consist of 11 detachable coupons, each coupon for a different tasting. To receive the corresponding tasting, you will need to go to the shops indicated along the tasting itinerary.

To cheer the 47th edition of the now traditional Limoni in festa this year there will be the Neapolitan musical group Foja and the comedian Paolo Caiazzo.

On 8 and 9 July, the streets of the picturesque town of Massa Lubrense will be filled with bright colors and heady scents. The local lemons, famous for their exceptional quality, will be the absolute protagonists of this festival.

Like every year, it will be a true paradise for lovers of food and handcrafted products. With the tasting itinerary you can taste lemon-based delicacies, from fresh appetizers to succulent desserts, up to refreshing drinks. There will be local specialities, enriched by the freshness and acidity of lemon, which will tickle every palate.

Limoni in festa 2023

In addition to the gastronomic aspect, the Limoni in Festa will also offer a feast for the eyes. It will be possible to admire wonderful themed installations, with the handicraft and typical products market that will transform the streets into a magical and fragrant world.

The atmosphere will be enlivened by music and entertainment for all ages. The Foja are a Neapolitan musical group that will perform in the “Miracoli e Rivoluzioni” concert in the first evening of the festival, Saturday 8 July. The band is known for its unique style, which blends traditional Neapolitan sounds with contemporary influences.

Sunday 9 July will be the turn of Paolo Caiazzo, an Italian comedian who will perform in the show “Eppure sorrido”. The actor is known for his ironic and satirical style of comedy, which tackles current affairs, politics and everyday life with sarcasm and humor.

The Lemon Festival in Massa Lubrense is an event not to be missed if you love authenticity, local culture and the intense flavor of lemons: an exciting experience that will stimulate all the senses.

Even richer this summer is the offer of yoga and pilates in Massa Lubrense.

From June to September, many appointments are held every week in some of the most scenic and evocative places in our area.

The yoga and pilates lessons in Massa Lubrense are free and open to all: practitioners, novices, teachers, the curious, to make room for insights and new experiences and create an opportunity for meeting, exchanging and comparing.

Thanks to the availability of qualified and specialized instructors, we offer four cycles of different yoga and pilates disciplines:

  • Vinyasa yoga at dawn, on Monte San Costanzo, with the instructor and teacher trainer Silvia Daliana
  • Hatha yoga at sunset, in the square of the Church of Marciano, with the osteopath Antonino Minervino
  • Pilates at the Annunziata Castle, with the physiotherapist Carla Marciano
  • Sri sri yoga at the Annunziata Castle, with the instructor Gelsomina Di Maio

We are convinced that the practice of these disciplines can change our lives for the better, through the exploration of the relationship between mind and body and between human beings and their context.

Indeed, if yoga is trying to be one with the universe, practicing it in the open air favors the feeling of union with nature, to reconnect to the Earth and to one’s self in a more profound way.
